I can hardly believe that Easter has come around again.  It seems almost too cold yet to be thinking of all things bright and spring like, not to mention Spring Lamb.  And to be honest, I'm not a fan of Spring lamb, and this year in particuliar I'm sure most of them were reared on nuts and indoors.  I'm happy to wait till the summer for their more tasty cousins.  And I'm even happer with an older relation, give me mutton or hogget anytime over the tastless indoor bred winter variety that hits our butchers in Spring.  Now that I have that rant out of the way, what will I be cooking for Easter Sunday this year?  As I'll be down in the West, where the garden is always over-run with Nettles this time of year (though the frost may have kept them away this time) I think we'll be starting with Nettle Soup.  Now, for main course, I'll try to get hold of some yearling or hogget (sheep 1 yr old ish) from my cousin who happens to be a sheep farmer.  With that I'll make Lamb Stew.  To me this is a perfect cross over between seasons dish.  A mix of winter warming and lightness.  Obviously there will be chocolate for dessert and I don't think I've posted my Chocolate Terrine recipe yet, so that will have to be it.  You'll find the Butterless Flourless Chocolate Cake and the Chocolate Fudge Pudding on our recipes section, and any of these will be a delight for your Easter Lunch sweet tooth.  I'm going to post all the recipes in our Recipes section.  Let me know how you get on.
