Getting Good Carrots

Firstly you must buy the best carrots you can buy. Just because they look like carrots does not mean they will taste like carrots. In fact carrots suffer badly from mass production and it’s hard to find really tasty carrots these days. So go to your local market and buy the ones with the tops still on and with lots of muck on them. These are bound to taste great and will be worth the trouble of glazing.

Method

Wash your vegetables carefully preferably before you bring them into your kitchen.

Keep a little of the top on the baby carrot, taking care to clean well in around it.

To glaze your carrots

Melt about 25g Butter in a wide pan. Let it bubble then add the baby carrots. Toss them in the butter till they brown a bit. The season with sea salt and freshly ground white pepper. Add 1 tsp sugar and about ½ cup of water, or water just enough to come half way up the carrots. The cover with a cartouche or paper lid for about 10 minutes.

The remove the cover and let the liquid reduce, takes about 30 minutes. By now the carrots should be tender and have a lovely shine. Most of the liquid will be evaporated from the pan.
