Miso and Soy Marinate

For fish, meat or poultry


Ingredients

  • 3 tablespoons Soy Sauce
  • 6 tablespoons Saikyo Miso
  • 6 tablespoons Sugar
  • 3 cloves garlic
  • 1 1/2 tablespoons sesame paste
  • (3 egg yolks – optional but will give a better glaze)

Method

Blend the lot together in the liquidiser

Put the Duck breasts (or whatever you’re using) into the ½ the mixture. Leave the other 1/2 for painting onto the food before grilling in the salamander.

The duck will be firstly grilled under the hot salamander and then finished in the oven
