BBQ Chicken Scewers with Satay Sauce

This recipe is suitable for the VIKING outdoor barbeque grill or the VIKING indoor Range with Chargrill.

Firstly, you’ll need some chicken breasts. Then cut in strips length ways, about 1 cm in thickness.

Soak some long wooden scewers in water for about half hour. This will help to stop them burning on the heat.

Marinate your chicken in garlic, pepper, sesame oil and a little soy sauce. Grated rind of a lime too, but not the juice. (The Juice will actually start to cook your chicken)

Now put these in the fridge over night or at least for a few hours and then scewer them onto the sticks. Refrigerate again until you’re ready to use themMake the Satay Sauce in the VIKING Blender Jug

You'll Need

  • 1 can of coconut milk
  • 2 tablespoons of peanut butter
  • 1 clove of garlic
  • 1 whole red chilli
  • 1 big teaspoon of golden syrup
  • 1/2 inch of fresh ginger
  • Juice of one Lime

Blend all of this till smooth and Season with Soy Sauce

Now it’s time to cook the chicken on the scewers. Light the bbq or the chargrill and set at a medium heat. Make sure to brush the chicken with a little sesame oil, so they won’t stick to the grid.

I warm the satay sauce and keep it warm over a pot of water on the hob or on the bbq. And when the chicken is cooked, you can just dip into the warm sauce.
