Hot Buttered Prawns with Garlic & Chilli
Ingredients
- 1 kg of uncooked medium prawns, that’s about 24.
- 60 g butter
- 2 tablespoons peanut oil
- 5 cloves garlic, crushed
- 2 small red chillies, chopped finely
- 1 small red onion, sliced thinly
- 4 medium tomatoes, chopped coarsely
- Lots of chopped fresh flat leaf parsley
- 2 tablespoons of your best balsamic vinegar
- 1 loaf of sourdough bread, sliced thickly
Method
Shell and devein the prawns, leaving on the tails
Heat butter and oil together in the wok
Cook garlic, chilli and onion until onion is soft, then add the prawns
Remove from the heat and stir in the tomato, parsley and drizzle with the vinegar
Serve immediately with the bread and some seasonal leaves.
