High performance cooking modes include TruConvec Convection cooking, convection roast, convection bake, conventional bake, convection grill and three levels of conventional grill. All the convection functions use the Vari-Speed Dual Flow System provided by the largest convection fan in the industry providing balanced air circulation and even heat distribution, and prevents exchange of odours and tastes between dishes that are being cooked together.

With the largest capacity on the market, The Viking EVESO530 also features an automatic pyrolytic cleaning system, electronic temperature probe and Rapid Ready system for super-fast preheating.
